It’s easy to get stuck in a rut when it comes to your breakfast. For some reason, breakfast is the one meal where people tend to eat the same thing everyday. But changing up your breakfast every once in a while will not only make you look forward to eating it, but your body will also appreciate it because a diverse diet is good for you. If you start work or school early and don’t have a lot of time for preparing anything, these 4 healthy breakfast toasts are perfect for you. Plus you’ll save yourself some money when preparing breakfast at home as opposed to grabbing something on the go.
CREAM CHEESE AND CUCUMBER
By making your own spread you can customize it to your liking and it will taste waaaay better than anything store-bought. Simply add fresh or frozen herbs of your liking (eg. chopped parsley, chives, basil,..) to plain cream cheese (use light cream cheese to make it even healthier). You can make this ahead of time to save yourself time in the morning. Then add cucumber slices on top. If you want to make it extra pretty, cut out flower shapes with a cookie cutter. P.S. These also make pretty open face sandwiches for a tea party 😉
TOMATO AND PUMPKIN SEEDS
This is probably the quickest one to assemble. Simply add tomato paste to your toast and then top it off with roasted pumpkin seeds, whole or chopped. AVOCADO ‘N EGG
This combo has been all over the internet lately, and for good reason. This toast is loaded with protein and keeps you full for a long time. Simply mash an avocado, add a couple drops lemon or lime juice and salt and pepper. To get a perfectly round sunny side up egg, fry the egg inside a biscuit cutter sprayed with non stick spray. With a small spoon, hold the egg yolk in the center until it solidifies. Then carefully push out with a spoon. Sprinkle with salt and pepper or chilli flakes. Enjoy!
