    Crispy Baked Zucchini Fries

    If only life could be as simple as these fries right here. They come together in little time with little effort and after about 35 minutes of baking time you have tasty hot fries ready to eat. If you have unannounced guests coming over in 30min (haven’t we all been in this scenario) and want to make a quick snack, these are the perfect choice. Served hot out of the oven these fries are super crispy and smell wonderful!

    I ended up with 2 kilos of zucchinis in my fridge this week because there was a sale and they were ridiculously cheap. But what to do with 2 whole kilos of zucchini? That’s probably a question I should have asked myself before buying them, however I thought I would definitely come up with something, after all this is a very versatile ingredient. So one part ended up in vegetarian zucchini koftas, another in these fries right here, some were simply baked in the oven as a side dish and the last part will end up in a cream soup. This was truly a zucchini week!

    Another thing I picked up at the grocery store, which was like Christmas and Easter put together for me, was kale. You might not think that is a big deal, however, in Austria kale hasn’t been around until now. I first had kale when we were in Canada and started really loving it when we were in NYC and I had a burrito bowl at Fresh & Co. The slightly spicy and tangy taste of the sautéed kale was what really won me over. So then we came back and I started looking for it here, without any luck. Finally kale was now introduced to a grocery store here and I have been making tons of dishes with it ever since. *Grinning like a weirdo because of kale*

    But back to these zucchini fries right here. If you don’t already have a package of panko breadcrumbs in your pantry, I highly suggest you get some if you want to make healthy fries in the oven. They create this amazing crispy exterior that ordinary breadcrumbs simply cannot. Concerning the flavor, you can use the spices I used or use any other herbs and spices you prefer. This is a very légère recipe and can easily be adapted to your taste buds.

    We enjoyed these fries with some ketchup but you could also serve them with some homemade flavored mayonnaise, marinara sauce or fresh salsa.

    Crispy Baked Zucchini Fries

    Description

    crunchy, crispy and delicious, best served with your favourite dip


    Ingredients

    Scale
    • olive oil
    • 3 medium zucchini
    • 2 eggs
    • 50g panko breadcrumbs (1 cup)
    • 1 teaspoon salt
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon thyme
    • 1/2 teaspoon freshly ground black pepper

    Instructions

    1. Preheat your oven to 220C or 430F and spray a baking sheet with olive oil.
    2. Cut the zucchini in into strips and set aside.
    3. Whisk both eggs in a bowl and set aside.
    4. Combine all the dry ingredients in a bowl and whisk together.
    5. Dip the zucchini strips into the whisked eggs and then into the breadcrumb mixture. Line onto the prepared baking sheet.
    6. Bake for 30 minutes on the medium rack and then move the baking sheet up to the highest rack and bake for an additional 5 minutes. Serve hot.

      These look delicious and so tasty! And crispy. We’re not always successful in that. Panko is the secret ingredient we didn’t know we’ve always had sitting in our pantry!. And LOL I don’t know what I’d do if I ended up with 2 kilos of zucchini (cry maybe haha).
