Pumpkin Spice Cupcakes with Cinnamon Frosting (or actually miracle frosting!). I have to share a crazy story about these cupcakes right here:⁣
When I was testing the recipe, I ended up a whole bunch of cupcakes and didn't know what to do with them. I was already gifting desserts to friends left and right but simply couldn't get rid of the entire dessert overload that was happening at my house. So in my despair, I decided to freeze these - frosted and all. I didn't have high hopes because as I always tell my readers "freeze unfrosted cupcakes" NEVER “frosted cupcakes”. But after defrosting them, I was completely stunned. The frosting still had the perfect consistency and held its shape perfectly! I felt like I had just made a huge discovery! Needless to say, from now on, I will be testing all my frosted cupcakes to see if they can sustain the freezer. ⁣

It worked out so well because during the week that I was sick, I had visitors over and had a perfectly finished dessert to serve them. I’ll definitely be making another batch of these to have on hand for surprise visitors! :) ⁣

My blog is currently getting a completely new design - I finally took the leap and hired a professional web designer. I'm so excited about the process and cannot wait to see my content in a whole new light. This spiced pumpkin butter is a very versatile treat to have in the kitchen and it can be used for a multitude of recipes. I mainly use it to make my own pumpkin spice latte but I also love it in porridge or on some toasted bread.
