Melon Salad

A refreshing and light summer salad composed of melons, watermelon, feta cheese and a drizzle of olive oil.

Don’t you just love the summer time with all the bbqs and summer parties going on? It seems like people are in a more celebratory mood than ever. This flavourful and colourful summer salad is a great dish to bring along to all those get-togethers. It is easy to make and tastes incredibly good. It makes a lovely side dish for a bbq or a buffet style party. Or you could bring this with to your next picnic.

If you love a combination of sweet and salty flavours you are going to love this salad. The spicy arugula (homegrown from our garden by the way!) alongside the sweet melons, watermelon and feta makes an incredibly flavourful and balanced dish. To top it off, we are adding fresh blueberries and basil. Lastly, a drizzle of good old extra virgin olive oil and some freshly ground black pepper is all this salad needs to knock your socks off.
To keep things simple, we are cutting the melons into slices which saves time and makes a nice presentation. The only thing you need to chop up is the watermelon. The feta cheese is simply crumbled over the melons. If you want to make a vinaigrette you can certainly do so, but this salad honestly doesn’t need it. The olive oil and black pepper suffice to bring all the flavours in the salad together.

Melon Salad
- Total Time: 15 minutes
- Yield: 2 servings 1x
Description
A sweet and savory summer salad that’s light and refreshing.
Ingredients
- 1/2 honeydew melon
- 1/2 cantaloupe melon
- 1/8 watermelon
- a handful of arugula
- 100g feta cheese or vegan feta cheese* (3.5oz)
- 80g blueberries (1/2 cup)
- a handful of fresh basil
- olive oil
- freshly ground black pepper
Instructions
- Cut the honeydew and cantaloupe melon into slices and chop the watermelon into bite sized cubes.
- Place the arugula on a plate and add the melon slices. Crumble the feta cheese over the melon slices and add the watermelon cubes, blueberries and basil.
- Drizzle with olive oil and sprinkle with black pepper.
- Serve immediately.
