Packed with carrots, crisp apples and freshly squeezed orange juice, this smoothie is a nutritious and delicious way to start the day.

After my embarrassing smoothie debacle I had shared with you recently, I found it was time for a delicious smoothie recipe to erase any memories of the last spontaneous attempt. This time I refrained from throwing random ingredients into my mixer and crossing my fingers that something delicious will come out of it. In fact, this smoothie right here was planned out well. I wanted to work with ingredients which really complement each other and I believe I found a good balance.

Flavors
Since carrots can have an intense flavor in their raw state, we’re adding a sour element to freshen up their earthy taste. What better ingredient to add but a crisp, sour Granny Smith apple? While they are delicious by themselves (or topped with some homemade peanut butter!) they work well in smoothies too. The orange juice and honey sweeten the smoothie to the perfect amount, sweet but not overly sweet. Lastly we round everything off with a bit of spicy ginger. That stuff is so good and pairs really well with citrus, like in this lemon ginger tonic.

Consistency
Some prefer their smoothies really thick, like smoothie bowl thick and others prefer a thinner consistency. This smoothie is a bit more on the thinner side, as that’s what I prefer. If you would rather make it thicker, simply add less ice cubes. It does, however, thicken overtime if you let it sit a bit.
To get a perfectly smooth consistency, you need to use a high-power blender that can churn those crunchy carrots into juice. If think your blender might struggle a bit, grate the carrots and the ginger beforehand.

Description
A nutrient dense breakfast smoothie
Ingredients
- 2 small carrots*
- 1 large Granny Smith apple
- juice of 2 oranges
- 1 cm fresh ginger* (0.4 inches), optional
- 1 teaspoon honey or sweetener of choice
- 2 handfuls of ice cubes (use less or more, depending on how thick you want your smoothie to be)
Instructions
- Wash and trim the carrots, quarter and core the apple and juice the oranges.
- Add all ingredients into a blender and blend until smooth.
Notes
*If you don’t have a high-power blender, grate the carrots and ginger before blending.

So simple and beautiful, and I’m sure delicious. My main gripe with smoothies is that they always have too much sugar in them. Glad to see this has only 1 teaspoon of honey. I will be whipping this up in my Vitamix very soon!
I know! It’s so weird that people would add so much sugar to something that is naturally sweet already. I never understand that. Anyways, have fun blending 🙂
